
Happy Friday! This week I am going to share a few recipes and food items that I enjoyed this week. I have 4 full days left of the Whole 30, so all of these things are approved. I plan to post my full experience and what I liked/disliked about the plan next week!
Being a dip and snack lover, this version of hummus was super easy and great for dipping crunchy veggies into. You may need to play with the consistency a bit by adding a bit of water. I also added a bit of dill for more flavor and for a garnish (above!)
Roasted Brussels Sprouts and Cauliflower Soup
Throw the roasted veggies in the oven and this soup comes together like magic. Really easy and filling for a cold night. My batch made three good sized servings.
Being a huge fan of the “So Delicious” coconut milk, I decided to try this in my coffee instead this month, considering the carton coconut and almond milks have multiple ingredients. Canned coconut milk is super creamy and great in not only coffee, but various recipes and smoothies. It does tend to be a little chunky because of the fat; this didn’t bother me too much, but please be aware.
Cherry Tart & Lime Polar Seltzer
It’s always fun to try the new flavors Polar comes out with. Lately I have been a fan of the Cherry Tart and Lime flavor. I was hesitant to post this since it may only be seasonal, but snag it while you can. A great base for a mocktail or bubbly tequila cocktail (NEED!)
These mango slices are great for on the go or when you are craving sometime sweet. Loaded with fresh mango flavor and no additives, preservatives or coloring. It takes FIVE pounds of fresh mangoes to make one of these little bags! A steal at $2.99.
