Zucchini Pizza Bites

So I’m beginning to think that all the food I cook (or post about) has to do with zucchini!  Maybe that’s because I always like to try new recipes using them.  They are very versatile, healthy and there is so much you can do with them!  Let’s just say that I LOVE pizza.  Is it bad that I die for Pizza Hut deep dish?  Nick says it is a grease sponge (true) but it is just so delicious.  If I ate that every time I wanted pizza it would not be okay, so I like looking into other options to keep my PH cravings at bay.

Now these little bites could be an appetizer or also for dinner.  I happened to have a HUGE zuke that a lady at work brought me from her garden so it worked out perfectly!

It really is simple:

One zucchini

Sauce of choice (tomato/pesto etc)

Cheese of choice (or no cheese!)

Other toppings (I used turkey pepperoni and basil from my garden)

Line your sliced zucchini on a sprayed pan with foil-broil for a minute or two on each side to get them soft.  Add sauce, cheese and whatever else you desire.  Broil for an additional minute or so, but make sure not to burn!

The recipe I used (below) says for 4 pieces, it is about 124.8 calories (not including the pepperoni though).  Check it out for more info!
