
Sometimes I am just too tired after work to be creative. This is one of my favorite dinners to make quickly. It is delicious and filling! If I am going to treat myself to a weeknight pasta dish, I always look on the back of the box and measure exactly what one serving is (or two if you are taking it for lunch the next day). Without doing this, it can be hard to tell how much you are actually eating!
Ingredients:
- One portion wheat rotini
- Half zucchini cut into medallions and then in half
- A handful of cherry tomatoes, halved
- Small handful of basil
- Splash of olive oil
- Two small mozzarella balls, if desired
- Garlic salt and pepper to taste
Cook pasta and strain. While the pasta is cooking, put your zukes in a pan on the stove to get them nice and soft. Season with salt and pepper. Put pasta into bowl and add ingredients, including zucchini. Toss around until fully coated and mixed. This is kind of like a hot pasta salad, and of course, ingredients can be added or subtracted, as with most of my recipes.
