
Another Pinterest find, baked avocado! So yummy! Looked easy and healthy so I had to give it a shot. I bought HUGE avocados at my favorite local grocery store, Sprouts, because they would be perfect for this. It was so easy to make and only took about ten minutes! I both halves for dinner, but it would be a good side or an appetizer too. It was a little hard to eat right out of the avocado, so I ended up mixing it in a bowl and eating that way. Would have been great to scoop up with chips (it does say salsa!)
I got the recipe from a site called Lazy Girl, but I cannot find the link anywhere!
Ingredients:
1 ripe Avocado
¼ cup bread crumbs
1 garlic clove, minced
1 Tbsp. grated Mozzarella
1 Tbsp. basil, chopped
Salt and freshly ground pepper to taste
2 Roma Tomatoes
Chopped Onion
Directions:
Preheat oven to 450°F.
In a small bowl, combine the bread crumbs, garlic, cheese; set aside. Mix the tomatoes, onion, salt&pepper and chopped basil
Cut the avocado in half and remove pit. Divide the tomato mixture between the two avocado halves. Top with bread crumb mixture. Place on a small baking sheet. Bake for 5-7 minutes. Serve immediately.
