I had been wanting a crock pot for awhile since I have started cooking for. I asked for one for Christmas, but since I could not carry it back in my suitcase, I didn’t get one. Luckily, my mom got me a Target gift card so I headed there to see what I could find.
I didn’t want a huge one since I am only usually cooking for one or two people, and I didn’t need a super expensive one. While kneeling down in the aisle, a girl came up to me and said that she had the one that I was looking at (Hamilton Beach 4 Quart Slow Cooker). Since I am trying to eat healthy (started WW last week again), I wanted to cook a healthy first meal. I decided on a full seasoned chicken with celery, carrots and onion. I had planned on adding potatoes but my slow cooker didn’t have enough room! (Guess I will have to cook cornish hens next time!)
I put everything in the night before and stuck it in the fridge so I didn’t have to deal with it in the morning before work. I put in:
Small chicken seasoned with garlic, salt, pepper, some paprika, garlic powder (stuffed with garlic too)
Baby Carrots
Onion
Celery
Rosemary
(I did not add any water and definitely didn’t need to!)
I put it on low and let it simmer in their for about 9 hours (it says 8 who is exactly gone for 8 hours on a work day? Come on!)
The chicken was very juicy and I served with the veggies and a small baked sweet potato-yum! Now I only really eat white meat because greasy meat grosses me out soooooo I think a lot of the chicken went to waste. My roommate likes the dark meat and helped me out, but I felt like I should have used it to make soup! Maybe next time.
