Easy Egg Drop Soup

I found the recipe below when looking for South Beach diet Phase one soups to make.  Low carb, very easy, tasty and quick!  I made it tonight for dinner and ate about half and I was pretty full!  I was actually surprised at how good it tasted, but still not as good as a Chinese restaurant of course.  Enjoy!

1 quart chicken broth
1 tablespoon soy sauce
1 tablespoon rice vinegar
1/2 teas grated ginger
2 scallions, sliced
2 eggs

To the chicken broth add the soy sauce, rice vinegar, ginger and scallion.

Heat over medium and let it simmer for 5-6 minutes so all the flavors will come together.

Beat egg with a whisk in a measuring cup so you can pour it easily. Using a fork, start stirring the surface of the soup in a slow circle and pour in about 1/4 of the egg, stirring as it turns into sheds.

Repeat three more times, then SERVE.
