
Lately I have been enjoying baking and roasting vegetables (just like my artichoke last week). I do not like broccoli uncooked, but have always like it steamed with butter and salt. I found this recipe that roasts it to perfection. I have altered it a little bit but I have included the original here as well. I often eat a whole head myself for dinner, or use it for a side!
Ingredients:
Head of broccoli
Olive Oil (a couple tablespoons)
Salt/Pepper/Garlic Salt
3-4 cloves of garlic
Parmesan cheese
Directions:
Cover pan with foil and preheat oven to 425 degrees.
Cut up broccoli into small pieces and put into bowl.
Toss with olive oil (usually a couple tablespoons; I use as little as possible while still coating it to be healthy!)
Add in salt, pepper, cut up garlic cloves and garlic salt. Toss in bowl so that all pieces are coated.
Put on pan and roast for 25-30 until some brown crispy parts can be seen (10 minutes before they are done, take pan out and sprinkle with cheese and put back in. The recipe calls for lemon as well but I did not like that when I tried it!)
