I love chicken fingers. I have forever and I always want to order them when I go out. I try to shy away from fried food most of the time, so that is why I was thrilled when I found this recipe. It is SO good; just as good as fried chicken fingers, I think. These are great on a salad, with a side, as chicken parm or by themselves with your favorite dipping sauce. They are tasty and very easy to make. I found the recipe on Pinterest originally, but I have included the main link at the bottom.
Ingredients:
* 1/4 cup parmesan cheese, grated
* 2 tablespoons dried Italian seasoned breadcrumbs
* 1/8 teaspoon paprika
* 1 teaspoon dried parsley
* 1/2 teaspoon garlic powder
* 1/4 teaspoon fresh ground pepper
* 4 boneless skinless chicken breasts (I have used smaller, chicken tenders and they work well) (about 1 pound)
**This is the original recipe I found, but I altered it by adding rosemary and oregano instead of parsley and paprika (I didn’t have those two ingredients stocked at my house!)
Directions:
Preheat oven to 400 degrees.
In resealable plastic bag, combine cheese, crumbs and all seasonings; shake well.
Transfer mixture to plate; dip each chicken breast in cheese mixture, turning to coat all sides (I put chicken in bag and did a shake’n’bake! Worked great)
Arrange on nonstick baking sheet.
Bake until chicken is cooked through, 20-25 minutes.
4 Weight Watchers points per serving.
